LOW CARB CHOCOLATE CHIP COOKIES

INGREDIENTS:
1-1/2 cups almond flour
3 tablespoons coconut flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 egg, room temperature
1/4 cup room temperature butter
1/2 cup granulated sweetener
1/4 teaspoon molasses or Golden Syrup (optional)
1/2 cup sugar-free chocolate chips (I used a chopped up sugar-free chocolate bar)
1/2 cup chopped walnuts (optional)
METHOD
1 - Preheat the oven to 350F (180C) and line a large baking sheet with parchment.
2 - Blend almond flour, coconut flour, baking powder and salt together in a small mixing bowl.
3 - In the large bowl of an electric mixer, blend together butter, vanilla, sweetener, egg, molasses and vanilla. (It will curdle a bit, but that won't affect the result)
4 - Blend in flour mixture. When well mixed, stir in chocolate chips and nuts.
5 - Drop 13 mounds of dough onto the baking sheet and flatten them a bit with the heel of your hand, or the bottom of a cup.
6 - Bake cookies about 12 minutes, or until the edges are lightly browned.
7 - Cool the cookies on the baking sheet for a few minutes, then transfer them to a rack to cool completely.
Serving size - 1 cookie. Calories - about 133 each. Net carbs - 2.1g each.
