I love making salsa chicken in my crockpot:
4-6 chicken breasts
Small Jar of salsa or can of rotel
Frozen corn or can of corn
Mexican spices (garlic, chili powder, cumin, cayenne)
Lime juice
Cook for 6 hours on low and shred the chicken and serve it that night as burrito bowls or taco fillings.
Then, with the chicken that is left, I pour about a quart of chicken broth in the crockpot, add some more spices, maybe a can of rotel, a can of black beans, maybe some cubed Velveeta cheese. I put that crock in the fridge and the next day, I put it back on to warm all day while I'm at work and we have tortilla soup for dinner.
Two meals and I haven't had to clean the crockpot yet! I just usually throw in whatever I've got on hand, I never make it the same way twice!0
