foods high in iron, potassium and vitamin A?

Everyday, it's the same story. I get to the end of my food diary and I'm still low in Vitamin A, potassium and iron. I need to find something I can add that isn't high in sugar or carbs. Any suggestions??

Dark leafy greens like spinach and kale are high in both iron and vitamin A0

Carrots and red peppers are high in Vitamin A. Tomatoes and brocolli are high in Vitamin A and potassium. Leafy greens and meat for iron. I find that by having a salad with a variety of veggies means having a high vitamin A consumption for the day. Add some leafy greens and it will help with iron as well. I need to start incorporating more leafy greens into my day.0
