foods high in iron, potassium and vitamin A?

Everyday, it's the same story. I get to the end of my food diary and I'm still low in Vitamin A, potassium and iron. I need to find something I can add that isn't high in sugar or carbs. Any suggestions??

    Dark leafy greens like spinach and kale are high in both iron and vitamin A

    Carrots and red peppers are high in Vitamin A. Tomatoes and brocolli are high in Vitamin A and potassium. Leafy greens and meat for iron. I find that by having a salad with a variety of veggies means having a high vitamin A consumption for the day. Add some leafy greens and it will help with iron as well. I need to start incorporating more leafy greens into my day.
