I would love to hear from somebody who knows,
If I'm looking through my calendar and realizing at the end of the day when I am not hungry at all but I have not met my protein requirements, is it better to omit the protein since its later in the evening and nearing bedtime- or better to eat the protein so that I make my numbers guaranteeing that my protein is higher than my carbs and sugar?

It does not matter. It is your choice.
If you are not hungry and are ready for bead, eat extra protein the next day.

Maybe plan your meals ahead if you can. Space protein out through all your meals so you don't have "leftover protein" to fill out.0
