Quick, but healthy meal ideas

Hello! I'm a pharmacy major who is in class 27 hours a week, and working in a pharmacy 10 hours a week on top of that. Between the homework I do and now trying to fit in time to go to the gym, does anyone have quick, simple meal suggestions? My plain chicken breasts or turkey sandwiches are getting a little boring. Thanks!

    I came up with a recipe myself. Get two or three chicken breasts(depending on how many people are eating- great for leftovers) season it with Mrs. Dash seasoning whichever you prefer. Add a little bit of water inside a baking dish. Put the seasoned chicken inside. Add lemon juice on top of the chicken and a little bit more seasoning. I put a little bit of butter on each chicken breast. Between the water and lemon juice you should have about half an inch of fluids or less in the dish. Cover with foil, cook for 1:00-1:10 on 350. So good!!! You can serve it with rice or potatoes. The fluid that you add makes a fantastic "gravy" since its water and lemon juice and a bit of butter I wouldn't even call it gravy. Hope this helps

    I always do fresh salad, smoked salmon, avocado, red onion, cherry tomato

    I don't use any dressing at all. if you eat salad, tomato and red onion together in one mouthful, it's perfect! And put salmon in your mouth itself hmmmm yum

    But that just me :)

    Use skinless, boneless chicken thighs. Season them with salt and dill, bake in a pan on high heat (you don't need oil sine thigh has fat that will render out). Cook cous cous with just a little bit of salt. Once chicken thighs are done, put cous cous in the pan you've been baking them in. Add a bit more dill, mix through and that's it!
    Serve with some tomatoes, or salad of your choice.
    I takes around 20 minutes max to do everything.

    This has been my lunch all week. I quickly prepped it on the weekends and kept in separate containers and thrown together the evening before. 100g brown rice, steamed broccoli and green beans, tin of tuna in springwater. I take a dressing to work - fresh lemon juice, 1 tsp olive oil, fresh basil. It's just under 300 calories, nutritionally balanced and keeps me going for hours.

    Slice some polish sausage, toss it in a pan with .5c water. Cook for 5 minutes. Toss some frozen broccoli in and cover. When the broccoli is steamed, pour off excess water and kill the heat. Add 1/4 c shredded cheese. Cover until melted. Takes 10 minutes from freezer to plate. Yum!

    Take some time over the weekend to make some food for your freezer. Pick a one pot dish, cook it, and divide it into servings. Label your containers and freeze. The best things are soups, stews, chilis, curries, even stuffed peppers. Learn to flash freeze (directly on a metal baking sheet) burritos, meatballs, nuggets, and any muffin tin recipe. If you make two dishes every weekend, you'll have about 12-16 servings for days when you can't cook. If you keep going, you have a lot of variety very quickly.

    Are you able to use a crockpot? If so, there are quite a few recipes online for healthy food and once it is done you can divide it up into multiple plasticware and eat it all week. I have a full-time career, husband, two small boys, and am in college full-time so we live by our crockpot! The recipe tool on here is WONDERFUL because you can add all the ingredients in for the full pot and then put down how many servings you divided it into. It keeps your recipes on file so you can just select quickly when you log each day.

    Some suggestions:
    -vary your sandwiches with eg veggies patties or tuna or egg or cheese and veggies, smoked salmon,mozarella and tomoto... and use some wraps or pitapockets or flatbreads instead of normal sandwich bread
    -homemade soup (cook once use over several days does not need much cooking attention, you can use precut frozen veggies or fresh precut veggies, broth, chicken or fish or scampi...maybe some small pasta or egg tossed in later on for the single serving)
    -homemade salads
    -instant oatmeal and bring some addins like fruit and nuts etc
    -greek yogurt and fruit and nuts and maybe some oats tossed in
    -cottage cheese with either savory or sweet addins like tomato and basil and tuna or strawberries and almonds

    I second what QueenMunchy said about batch prepping on the weekend. I do the same and it is def worth the time. Rotisserie chicken is a great option if you are short on time. There are tons of recipes you can make with it. Some of my favorite quick ones are:
