I have noticed that I never hit my calorie goal. It's so hard because I don't want to cook. So I eat fruit, veggies, boiled eggs (thing I don't have to pine over).do you all have any quick low carb veggie/vegan options. I can't build much muscle eating how I do.

Steaming veggies is a 5 minute endeavor. You can sautée them in the same amt of time. That's about all I've got because I'm not vegan and eat a lot of meat.

Avocados? Nut butters? If you eat salads, maybe try adding some oil to it.

Vegan is one thing, but low carb is a real kicker.

I don't like cooking either. When I'm on a diet and need protein and some calories I have a protein shake. I like the Isopure brand.

Textured vegetable protein just takes adding hot water and mixing with a spoon. It won't taste the greatest that way but it'll have protein.

Epic fail on my earlier response. My apologies, I totally missed the veggie/vegan part of your post

Canned beans. Don't forget to rinse them to reduce the sodium. Mix 'em with veggies, eat them on their own with some tomato sauce, etc. You need way more protein than you're getting if all you're eating is egg and veggies.

I'm not a vegan or vegg. I just mostly eat like this out of pure laziness. And I am not a fan of meat but I will eat it because of mineral and vitamin absorption. I love these suggestions all are very helpful. Now that I'm am counting calories I have not had a large appetite. And I need to get some more food in. Thanks!!

Tofu stir fry or scramble - about 10 min prep time (or 1 min if you buy pre-cut veggies) and about 5 min cooking time.
Canned beans - add to salads, or nuke for 1 min and ready to eat
    Vegan protein powder smoothie
    Crockpot vegetable chili or soup
Roasted vegetables take a bit of time to cook, but only one pan and a few minutes of prep time

Steam in bag microwave veggies are a savior for those times I don't want to cook. Also make a big pot of grains (millet or faro) and keep it in the fridge to warm and add to the veggies. I have an electric pressure cooker with a timer that makes making the grains very easy - throw in grains, water and salt - put the lid on and turn it on.

Frozen veggies and protein grilled on the George Foreman grill takes 5 minutes.

And when you're bored of it and realize that you can't eat that way all your life, suck it up and learn your cook. Or find a girlfriend or boyfriend that likes to cook.

I love bean salad. I usually put in corn, cucumber, celery, onion, black beans, garbanzo beans (chickpeas), kidney beans. Squeeze a lime over top and drizzle with balsamic vinegar. Most of these things are canned so very quick. And you can buy most veggies pre-cut so really this takes no time at all. Just throw it in a bowl.

Look into cooking classes around you, maybe you can find your "boo thang" there. If not you might at least learn to cook a couple things you like easily and learn to enjoy it a little more.
The great thing about cooking for yourself is the control it allows you and quite honestly it tastes better than most deli and delivery food

Veggie burgers by MorningStar and Boca are easy in the microwave. Boiling sweet potatoes takes about ten minutes (then drain them and add whatever seasonings you want).

Find a good vegetarian/vegan protein powder and mix it with soy or almond milk for a protein shake.

I'm trying to think of other things I eat without cooking that are high-protein and vegetarian...

I don't like to cook, especially as a "day in, day out, all the time, will the cooking never stop?!!" endeavor, so when I cook I try to make it count and cook enough for a good long while, filling up the freezer with meals I can just take out the night before and throw in the oven before dinner.

Vegetarian soups are easy to make in the crockpot and will make enough for lunches for the week.

Canned beans. Just mix with ready made corn and tomato salsa, some oil, and some veggies on the side, steamed with a bit of oil in the microwave. You can make many varieties of meals from canned foods and foods that don't need much prep. Zip'N Steam cooking bags are an easy option for microwave steaming if you don't want extra dishes. You can even buy the vegetables pre-cut. Quick sandwiches: just use a thin flatbreads to reduce carbs, and use a variety of things to make sandwiches like deli cuts, hummus, guacamole, or whatever you have lying around that would fit into a sandwich. Takes only a minute to make. Canned soups, open, dump into a bowl, microwave, done. For a quick egg sandwich quickly whisk an egg with a fork with some already grated cheese and pour it into a pita then microwave for 30-90 seconds (depending on the amount of eggs and size of pita). If you eat cheese you can make a quick treat by sprinkling some instant chocolate pudding powder (about a teaspoon) into cottage cheese with some peanut butter. Overnight oatmeal and pretty much a thrown together and forget kind of deal. Quick salads like throwing together cherry tomatoes with some mozzarella cheese and olive oil, with a few roughly hand torn basil leaves. If all else fails there is always frozen dinners. There are countless of easy and quick ways.

    Some are even vegetarian.

Bread is versatile. And you can load it full of goodness.
