Spaghetti Squash Recipe

I made this the other day. It was really good and everyone liked it.

Cut spaghetti squash in half, take out seeds, put cut side down on baking sheet with a little water, and roast in oven at 350 until fork tender (mine took 30 minutes)
Saute sliced mushrooms in olive oil
Stir in a chopped garlic for a couple minutes after mushrooms are browned (I used about 6 cloves)
After garlic is soft add green beans and broccoli with a little water
Turn off heat and cover to steam beans and broccoli
Use a fork to remove spaghetti squash and top with the steamed vegetables

    I make something similar-ish. But after I roast the spaghetti squash I saute mushrooms and peas in a pat of butter. I add that on top the spaghetti squash and then I top everything with poached eggs and freshly grated parmesan. I'm a sucker for a poached egg on noodles, so why not on spaghetti squash? The yolks make a lovely sauce when you break them and it adds protein.

    I love spaghetti squash with mushrooms. We had something similar just yesterday with some roast chicken.

    You inspired me!
    I did baked spaghetti squash for my noodle, sautéed garlic with my chicken, broccoli and mushrooms, added McCormick's Montreal Chicken seasoning to the chicken. Made the sauce using cream of chicken, basil and Parmesan cheese. So yummy and super filling!

    made some spaghetti squash with chicken/asparagus/broccoli/minced garlic the other day....delish....I think spaghetti squash is probably 1 of new favorite foods
