Best baked oatmeal

Just thought I'd share my favorite new breakfast. I've been eating it every day for breakfast for the las month and it's so delicious. So in a bowl mix together 2 cups quick oats, 1 tbsp cinnamon, 1 tsp baking powder, 1 cup frozen blueberries and 1 cup chopped walnuts. In another bowl whisk together 2 cups milk, 1 egg, 1/2 cup honey or pure maple syrup and 2 tsp vanilla extract. Pour over oat mixture and mix to combine. Spray a 9x13 pan with cooking spray and pour oat mixture into pan. Top with 1 chopped banana and bake at 350 degrees until set. Let cool and slice into 8. It's so delicious. Freezes well. It's 290 calories per serving. I usually eat it with 2 scrambled eggs on the side for a total of 440 calories and it keeps me full and satisfied until lunch. Full of protein, fiber and healthy fat.
