Calculating calories in sauces/drippings, etc?

How do you handle calculating calories in sauces/drippings? For example, I cooked about 4 chicken quarters in broth in my Instant Pot. I get a ton of "sauce" after that.

Say I get about 6 cups of liquid after cooking and have split the recipe into 4 servings. I take a 1/4 of the meat and add about a 1/2 cup of liquid. How on earth do I go about calculating this?

What about if I remove the skin from chicken after cooking? Do I calculate the calories with skin or without? I think I'm making this too hard - I've probably whirled myself into so many circles that I can't think straight.

    I just use the calories for raw chicken/fish. Any calories lost in the oven, I call it "insurance". I do not bother measuring.
    I cooked chicken or fish in the oven in a metallic paper pouch. I could measure the liquid broth from the cooking but I doubt it will move the needle for calories.
    I take the chicken/fish skin before I bake it
