I love salads but eating the same ones over and over again bores me!

A head of Romaine Lettuce
2 oz Tuna in water
2 TBS Raspberry Vinegarette
blueberries
jalapenos
diced apple
diced onion
grapes
carrot slivers
cucumber slices
mix well and enjoy

my most recent fav is....
head of Romaine chopped
about 1 cup chopped cabbage
about 1-2 cups chopped spinach
chopped red onion
broccoli
raw ramen noodles packet crushed and toasted in skillet with no calorie spray
soy dressing
2 T reduced sodium soy sauce
2 T red wine vinager
1 t sugar
1 T olive oil
1 t chopped garlic
1 bay leaf - I try to make this the day before so the bay leaf has time to soak in the liquid.
sometimes I also add a little sprinkle of the seasoning packet from the ramen noodles.
even my kids love this and when you are dividing up 1 packet of ramen between the whole family the calories are not so bad.

Olivia's organic 50/50 spring mix w/spinach
3-4 dried apricots, sliced
3oz grilled chicken, spiced with salt, pepper, garlic and onion powder, basil, rosemary.
Kens lite olive oil n vinegar dressing
1 tomato
sometimes I'll add 1/3 cucumber
half a granny smith apple or mcintosh apple, sliced
1 oz of either feta or fresh mozzarella
Comes out to about 400-450 calories after weighing everything.

BBQ Chicken Salad Recipe
•1 tablespoon olive oil
•2 boneless, skinless thin-sliced chicken breasts
•Kosher salt and freshly ground black pepper, to taste
•6 cups chopped romaine lettuce
•1 Roma tomato, diced
•3/4 cup canned corn kernels, drained
•3/4 cup canned black beans, drained and rinsed
•1/4 cup diced red onion
•1/4 cup shredded Monterey Jack cheese
•1/2 cup shredded cheddar cheese
•1/4 cup Ranch dressing
•1/4 cup BBQ sauce
•1/4 cup tortilla strips
Instructions
•Heat olive oil in a medium skillet over medium high heat.
•Season chicken breasts with salt and pepper, to taste. Add to skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces.
•To assemble the salad, place romaine lettuce in a large bowl; top with chicken, tomato, corn, beans, onion and cheeses. Pour Ranch dressing and BBQ sauce on top of the salad and gently toss to combine.
•Serve immediately, topped with tortilla strips.

If you're wanting to get away from lettuce-type salads sometimes, my family loves olive salad. I chop up a package of celery and a bag of shredded carrots. Then I pour over a large jar of sliced Spanish olives (including the juice). Add some white wine or rice vinegar and a tablespoon of Italian seasoning. Let it marinate overnight. It's delicious and really crunchy.0

Chicken salad with avocado instead of mayo too for non-leafy salad options.
I eat a salad for the toppings Pine nuts, avocado, tomato, cucumbers, banana peppers, olives, etc. I can cut up the chicken I have for lunch and throw it on there too. I find that cheese and bacon sadly gets lost in the mix, so I skip it (and I love cheese and bacon). It's your salad, put what you want!0 -

I love beets, cucumbers, goat cheese and almonds or walnuts in my salads... with balsamic vinegar and a tad of olive oil; I also love prepping hard boiled eggs for the week and I throw 1 or 2 of them in there, too0
