Needed: Couscous, Quinoa, and other side recipes needed

So I have the meat down. But sides are the trouble. Mark can no longer have potatoes, white rice. And he dislikes noodles (unless they are cajin) And it is so hard to get him to eat veggies. haha Picky eaters (ahhh) The doctor wanted us on 100% whole grain brown rice, bread, and noodles. I personally dont like the taste of brown rice.
We need high fiber, and protein foods.
I recently bought red and black rice-but I have no idea what spices would be good with them. (hopefully the dr will be ok with this choice-instead of brown rice)
Quinoa is another story. lol It looks weird. And seems even more boring that brown rice.
This is a huge change for us because his diet before this were potatoes. Errday. haha (tired of them)
Any other side recipes are loved. Especially for picky eaters. Just about all the veggies he will eat are green beans and corn. (corn is out of the picture too) I need him to like other veggies.

Because this is a lifestyle change.

Give this one a try. Whenever I am trying to get my sweetie to eat healthier, I just disguise everything with high flavor ... so far it's worked amazingly. I have been working hard trying to lose weight. He hasn't, but has lost over 20 lbs since January by default of eating what I cook and bake... woohooo!
Another fun idea is to buy a big sweet potato and cut it up into french fry slices. A little drizzled olive oil and salt, then pop it in the oven... healthy, delicious french fries without actually eating white potatoes! (I, personally, do not like sweet potatoes at all, but when made this way I love them!)
