I finally. Started researching the idea of net carbs, that is determining the total number of carbs by subtracting fiber and alcohol sugars. I started doing this because so many of these newer paleo bars seemed to be high in carbs... But also high in fiber, so the net fiber amount was low. This took out the "Sting" of the high carbs, but seemed too good to be true. Frankly it seems like a marketing scam... Also, I've been gaining weight on the weeks where I ate those bars. There doesn't seem to be a reasonable substitute for just a low carb bar...
Any thoughts out there on this?

Yeah, I tend to skip energy bars due to their high sugar or carb content. I go with total carbs though.
Are you following a low carb plan? If not, then just looking at the calorie content of those bars might be enough for you.

I look at net carbs for blood sugar reasons and I've heard that sugar alcohols can still affect that. So I only subtract the fiber out when checking my carbs per meal, etc.0
