Hearty Breakfast Casserole recipe - 232 calories/serving

I've been making this casserole ever since my husband and I went Paleo a while back. It's a good filling recipe. I usually bring a serving to work for lunch because it's easy to prepare in the morning, just cut off a piece, through it in the Tupperware and you're good to go!
• 12 large, Eggs - Scrambled (whole egg)
• 12 ounce, Frozen Chopped Spinach (12 oz Package 340g)
• 1 container (12 oz ea.), Hot Sausage
• 1 medium (approx 2-3/4" long, 2-1/2" dia), Peppers, sweet, green, raw
• 1 medium (2-1/2" dia), Onions, raw
• 1 sweetpotato, 5" long, Sweet potato, raw, unprepared
Brown the sausage and remove from pan.
Sautee Sweet Potato and onion in grease...should be firm not too soft/not raw
Put everything in 9x13 and bake 1 hour at 350.
You can add additional veggies like mushrooms or jalapeno peppers or whatever you'd like to make it more appealing to you.
This makes 12 servings at:

Love it! When I make big egg casseroles I like to use half eggs and half egg whites to up protein but keep fats and calories lower0
