This soup is very good and filling

Beef barley vegetable soup Oxtail

1 tablespoon olive oil in pot
2 Pounds of oxtail seared in pot 10 minutes on each side and remove from pot
Add to pot:
2 cups of chopped leaks White part only (1 pkg of scallions using the entire scallion)
1 cup of Celery chopped
1/2 cup Onions chopped
2 cups Carrots chopped
2 cloves of Garlic chopped
Stir vegetables and cook 10 minutes
Add herbs:
3 bay leaves
2 sprigs of thyme tied together
Add oxtail
10 cups beef broth
Salt and pepper to taste

Bring to boil; lower heat and Simmer 1 hour
partially cook 1 cup barley in 4 cups of water (30 minutes until tender)

Remove herbs from soup before adding barley

Drain barley and add to soup cook 20-30 minutes
Remove oxtail, cut off bone, add meat back to soup
