Veggies on the go

One of my most neglectful areas is getting a good number of veggies in my lunch. I usually add a handful of baby spinach to a sandwich, but that's usually it. What does everyone do for portable veggies to eat at work? I'm not a huge fan of baby carrots.

I'm not a fan of carrots, either. I really like peppers, snap peas, or radishes as go-to items (they are great with a little salad dressing as dip, or hummus, or even mustard - I love mustard with peppers strange as that may sound). Cucumbers, if you like them. Or zucchini - cut as rounds or strips with a little salt or the above as dips. Do you like raw mushrooms? I'm not a fan, but if you like them raw they make an excellent snack! Raw cauliflower, celery ... there are many options out there. It sometimes helps to just walk through the produce aisle and see what's there. There are so many veggies than can be done raw or cooked in advance, then used as a snack.0

Slaw is good. You don't need all that mayo. Look for Sweet & Sour Slaw and Broccoli Slaw.
I make a non-lettuce salad: Shredded carrots, sliced celery, sometimes thawed French style green beans and thawed peas tossed with Newman's Sesame Ginger dressing.
Snap peas are yummy all by themselves. Cucumber slices, pepper strips, jicama slices - dip in Greek yogurt with ranch seasoning mixed in.
My work has a microwave. I keep a couple Steam Fresh bags in the freezer. I eat half on day one, store the rest to reheat for day 2.
Glad Steam Easy bags are great for fresh green beans (if you have a microwave). 3:30 is all the time they take.
