Anybody have any healthy lunch ideas?

    Keep things as easy as possible. Save some dinner from the night before or make two breakfasts and have the second breakfast for lunch.

    My lunch is always pretty simple:

    Tuna Sandwich (low sodium tuna, 1 Tbsp mayo, sweet relish, lavash, lettuce); an apple; small piece of chocolate (the type varies).

    I batch cook and microwave it. Some of my go-to items are:

    Chicken and veggie soup (super easy with bags of frozen mixed veg)
    Chicken brown rice and broccoli casserole
    Chilli with extra veg
    Frittata with veggies and cheese
    Tuna pasta bake bulked out with veg

    Or I make salads, this week it is baby spinach, capsicum, cucumber, radish, chickpea, seasoned chicken and a basic vinagrette.

    tuna salad on spinach, three bean chili, chicken taco soup, leftovers from dinner, black bean soup, protein with roasted veggies

    I know that no one likes premade frozen meals on here but they are often my go to because they are easy. I always have three or four in the freezer at work along with a bag of salad in the fridge. I f I have leftovers from dinner I will bring that instead. If I have some extra grilled chicken I'll throw that on some of the salad. I almost always have a big salad with every meal.
