What would be a good side dish with cheesy broccoli quinoa patties? What would you eat with it?

I'd like to increase my iron intake, if possible with this meal.

Give me your best ideas.

    My cookery book would suggest "something red" to complement the golden-green tones in this dish. So I'm going with steak. Or bacon-wrapped liver.

    iron intake aside...when you say cheesy, I think heavier so would have a fruit salad with it.

    Chicken. Chicken goes well with quinoa, cheese, and broccoli.

    For a vegetable, maybe roasted butternut squash, radishes or beets.

    Meat- Beef, Chicken, Turkey, Fish, Pork
    Eggs
    Salad- spinach or kale
    Soup- lentil, bean, tomato, chicken noodle, etc

    As an FYI, dairy affects your absorption of iron, and that the absorption of iron through food ends up being rather minimal (that last is what I was told by my hematologist). That being said, spinach/kale is your high winner for iron in vegetables, and liver for meats, as have been suggested before. :smile:

    to have a little fun and add some iron: take 1 patty, top with a sautéed green like spinac for a bit more colour, and then arrange on top 2 or 3 pan seared shrimp in a tomato based curry or sambal...thinking Indian flavours.

    Make them smaller and you'd have tasty nibble for parties.

    ...and the shrimp has a good iron content.

    Sautéed spinach with onions in olive oil, sprinkle toasted sunflower seeds afterwards!

    The patties sound delish!
