Oatmeal bars

Ingredients
3 c. oatmeal
1/2 c. chocolate chips
1/3 c. packed brown sugar
1/3 c. vegetable oil
1/3 c. honey

Directions
1. Mix brown sugar, honey, oil in saucepan over medium-high head and bring to a gentle boil.
2. Cook stirring for 1 min.
3. Remove from heat and add oats, stirring until well-combined.
4. Pour into dish and sprinkle with chocolate.
5. When cool enough to touch, press into pan and then cool to room temperature. Cut into squares.
Can be stored in air-tight container.

Notes: I used chopped dark chocolate, and not that much. I think it's up to personal tastes, as it doesn't affect the texture. I also added chopped almonds the second time I made it.

Very easy and fast to make, and makes a portable, relatively healthy breakfast. Granted there's sugar and oil, but at least it's not refined white sugar, and there's omega-3s in the oil. This was originally a gluten-free recipe from Martha Stewart, but I don't have those special ingredients.
