Vietnamese pork springrolls and nuoc cham?

I have no idea how to log these, since I don't know if any vietnamese franchises that would have nutritional facts on their website(all the ones around here are privately owned) and I'm seeing entries from like 70-250+ per roll and protein contents from 3-16g per roll. Honestly I don't even know if they were deep fried or not, I have had a waiter at a different vietnamese restaurant tell me my rolls were "just going in the fire". They were pretty uniformly crispy, but some did have much darker brown/black coloration on the ends that didn't look characteristic of a deepfried food to me. Anyone have any helpful hints about my mystery cheat meal?
