Vegetarian/Vegan Super Bowl Recipe and Snack Ideas!

If you're like me and want to eat healthy on SBS, but don't wanna sacrifice the fun of eating game day foods, try some of these out!

*I'm going all vegetarian with my meals since I will be adding dairy to these recipes. You can substitute cheese with just avocado or cashew cheese, and eggs with "flax eggs" which is 1 tbsp flax meal to two parts water, stir, then set aside and let it thicken. "


BLACK BEAN BURGERS!

1 can of black beans rinsed and drained.
1/4 cup of whole wheat flour
1/4 cup of finely chopped onion
1 egg (or 2 egg whites)
1.5 tsp cumin
1 tsp chili powder
1 clove of garlic
Salt and pepper to taste.

Mix all ingredients in a bowl, and mush it up good. I use my hands because it mixes the best. Form into 4 or 5 patties. Heat a little olive or coconut oil in a pan over medium heat, grill on each side for 4 minutes or until browned on each side.

That's it! Dress as you would any other burger to your liking. I serve my on sprouted Ezekiel bread with cheese :)


STUFFED MUSHROOMS

1/2-3/4 box of washed, patted dry, and gutted criminology mushrooms. (Depends on size of mushrooms)
1 cup of low fat Greek yogurt (or guacamole for vegan, either way it's bomb)
1 clove of garlic
1 tsp cumin
Salt and pepper to taste
A handful of chopped frozen sweet potato fries
1/4 cup of frozen spinach, thawed and squeezed.
Parmesan cheese for topping.

Preheat oven to 350
In a bowl, mix Greek yogurt, spinach, spices and garlic. Omit and adjust spices according to taste if going for the guacamole version.
Full each washed and gutted mushroom with a pinch of chopped sweet potato fries, a small scoop filling, and top with Parmesan cheese.
Place on cookie sheet and bake for 22-28 minutes.

* note, you can use stems of mushrooms, chopped up, sautéed and add them to recipe.


SNACKS

I am serving baked blue corn tortilla chips with guacamole, hummus and cashew cheese dip on the side.

DESSERT

Halo Top ice cream. Yum.

    I'm making a vegan cheese dip (with Daiya cream cheese and pepperjack). It's a long run day so I've got the extra calories to play with. My husband also made salsa.

    That sounds yummy! If you haven't tried cashew cheese, you should. It's so yummy.
