Not hitting my goals

So, I have just gotten back onto Calorie counting as we try to figure out what is going on with my body.
I lost 10kg (Not reflected on MFP) over about 6 months. In the last two months I have moved cities and started a whole new lifestyle full of awesome healthy, wholesome food, friends, lots of mountain bike riding and gym.
I have lost several CM off different areas of my body (yay) and put on some muscle (More yay) which has put my fat percentage down (woo!) but there is still fat there.
So I have logged a typical day into my diary. With everything apart from dinner accurately weighed (It will be weighed when I go to make it tonight).
I am aiming for 1500-1700 calories a day.
100g Carbs
100g Fat
100g Protein
(As per advice from my PT)
As you can see, I am falling short of my calorie and macro goals (Except Protein - hence my muscle gains)
Does anyone have any advice on how I can cram some more in?
Note:
- I will not eat empty calories such a spoonful of peanut butter
- Fruit is like candy to me. I eat a peach every couple of days during the summer. I have a low tolerance to sugar so try to avoid it when possible or only have it while doing serious exercise.
- My current aim is 15km (But may get up to 20-25) on the bike a day and I am lifting 3 days a week.
