Plateau - I can't seem to break through

I actually gained a couple of pounds when I was traveling for work and was really surprised. The week I was off my normal routine I tried to eat healthy and logged everything. I made smart choices eating nothing fried and substituting steamed vegetables for starches, etc. I also worked out for three of the 5 days I was traveling. Since our lunches were catered in, it was difficult to tell just how many calories I was eating. But all in all, I felt I should have lost week during that week instead of gained.
On top of this, I have been sick since I have been back.
Does anyone find that if they eat too few calories they have a more difficult time losing weight because the metabolism get's out of wack and goes into a preservation mode?

You're not going to lose weight every week. Things like eating out and travel can impact whether or not you see the weight on the scale go down within a week.
Your metabolism doesn't get "out of wack" in a week.0
