Cloud Bread - anyone tried it?

Has anyone tried this recipe ( or similar) ? Just curious what it is like. I've cut out bread as I it just bloats me too much and it seems to make me lethargic.

    So it's basically meringue with cream cheese in it? Might have to try that.

    I tried it once, but apparently didn't bake it long enough ... they came out pretty soft and flat. HOWEVER, I later gently sliced one open and toasted it face-down on a hot pan ... it was really good.

    I first discovered these rolls while doing the Atkins diet..they are also called call oopsie rolls (mine did not use honey)...they saved my life! Once you accept they are not bread and get the hang of making them right..they are an awesome substitute for bread. I'd make them and store them in the fridge, in a 9x13 container with wax paper between them. I'd heat them a little in the toaster and use them for sandwiches (awesome). If you look on the net you will find a multitude of ways that you can change them up..even do pancakes with them. While on Atkins, I kept a supply of these in the fridge...I couldn't have survived that diet without them...just make sure your egg whites are good and stiff, adding cream of tartar will keep the rolls from deflating after they are baked...don't over work them when folding in the other ingredients. If you are counting carbs and missing bread, you'll want to try these.

    As crazyravr stated these are for low carb diets...however, you can use fat free cream cheese and cut the calorie count down to about 66 per roll. I made a batch yesterday using low fat cream cheese I had on hand and they came out great..I don't use the splenda and I sprinkle a little onion powder and chives in for more flavor. Again the key to successful rolls is to make sure the egg whites are stiff (stand up in peaks), don't over mix them when adding the other ingredients and don't over bake them..just let them get a nice light brown. You will see recipies saying NOT to use fat free cheese but that is because on Atkins/low carb they want you to have the fat.

    I was talking to a friend about it, because she is (legitimately) gluten intolerant. She decided to make them and they were a hot mess. Stuck to the parchment, broiled to brown in about 30 seconds (not a minute) and not much fun to make in the first place.

    I've made cloud bread/oopsie rolls and they were pretty good. You have to let them cool down and store them in a ziplock baggie or they will harden up. You can also sprinkle on everything bagel spices on them to give them a bagel flavor. You can toast them and spread peanut butter on them instead of eating regular toast. I've also used them instead of naan bread and they held up fairly well.
