I have a new utensil that you use zucchini and twist it around and it makes them into long strings like pasta. (I forget what it's called, but it's really cool)

I used:
- Two zucchinis and made them into "pasta"
Put them in a big glass bowl
- Half bottle of Trader Joes organic no salt marinara sauce
- Half tub of fat free ricotta cheese
- 2 egg whites
- handful of shredded cheddar cheese for later (you can use whatever cheese you like, I didn't have mozzarella cheese)
- tbs of Parmesan cheese
- salt, pepper, garlic powder, onion powder and dried basil
- Mix all ingredients in a bowl (except mozz or cheddar cheese) mix really well by hand
- Pour into a greased pan or deep cookie sheet (I used Pam spray to coat the bottom to prevent sticking)
- Bake on 400 degrees for 40 minutes or until the mixture looks firm and not runny
- When it looks firm, put mozz or cheddar cheese on top and take out when melted.

My husband said it tasted like Lasagna and loved it!
