Almond milk in baking?

can I use almond milk as a substitute for regular milk when baking? Pancakes, muffins, etc?

    yup... works just fine. What are you using as a binder, though? That's the tricky bit.

    Well, i just planned on following the recipe. Bisquick, box cake mix, so I'm guessing eggs. Anything to avoid?

    nah... if you add a tbsp of vinegar or lemon juice in 8oz it'll simulate buttermilk, if you've a mind. Apple cider has a more palatable flavor than white, though.
