How to increase calories healthily

Hi,
My goal is 1600 calories a day alongside x2 500 days.
I'm currently sitting at around 1250 calories a day and want to up it as healthily and cleanly as possible. I don't find I'm that hungry after the below days eating but I also don't want to be consuming too few calories.
Oats and raspberries
Brown rice peas and green beans
Quest bar
Chicken breast with broccoli
Hot chocolate
I don't want to incl meat to my lunch meal and am not hungry before lunch so another snack isn't appealing, I already force myself into breakfast to up the calories. I can easily go til midday without being hungry. I also have a hot chocolate each day before bed as a little reward and I'd like to cut that out but that's dropping calories by another 200. My portions are quite small but I find them to be filling?
I am 30kg overweight and 5'7 with a desk job so not exactly small or active (although go to gym x3 a week). I'm also counting calories correctly and weighing everything and following any packet nutrition info.
Argh, who'd have thought I'd be struggling to UP my calories!!!

Keep total increase to no more than 50 cals/day, incremented another 50 cals on a weekly basis. IE: take it slow.0

What were you eating before you started eating healthy/trying to lose weight?0

I've been doing this since end of December with a few bad things here or there but 70% of the time as above. I've lost about 3kg over two months, so not terrible but I'd have thought at my starting weight of have lost more? I dot want to lose more than 1kg a week but I also want to lose more than a gram!
In all honest Ive eaten the exact same as above for months but I'd have something a little less healthy for dinner or would get a chocolate bar or something. I put on all the weight maybe a year ago but losing it is impossible?0 -
Snack on raw nuts and dark chocolate, dip apple slices in nut butters, eat full fat dairy, use olive and coconut oils, add a little butter to the oats & raspberries, rice, peas and beans - good cals in small portions.0

My question is why are you only eating 500 calories on two days??? I think you might see better results if you the 1600 calories every day. Or eat whatever mfp says to eat to lose 1 pound per week.

Sorry should have explained that - I am doing the 5:2 diet as it works best for me and also I like the health benefits that apparently come with it.

greek yogurt - good source of protein and you can buy different %s of fat content so you can really choose how many calories you get from it. Plain only though. If you buy flavoured, you'll get too much sugar. You can always add flavour to it with other less sugary things.0
