home-made cheese sticks with no flour (or very little)

I am celiac so I can't use wheat flour, but as I've aged I am less tolerant of all grains. I have made cauliflower pizza crust and really liked it so I decided to try to substitute cauliflower in my cheese sticks that I love. Cheddar cheese is not processed the same as other cheeses so it is okay for me to eat. It doesn't have whey from what I understand. Don't quote me on that.
So
Favorite Cheese sticks
4 ounces cheddar cheese, very finely grated
1/4 cup softened butter
1/3 cup potato starch or cauliflower ground in a food extractor such as Omega 8004 juicer
1/2 cup cornstarch
pinch of salt
1/4 teaspoon ground red pepper (optional)
1/4 teaspoon xanthan gum
3 tablespoons cream (I use sour cream)
Preheat oven to 375 degrees
Very finely grate cheddar cheese. Set aside.
Combine butt, potato starch, cornstarch , salt, red pepper, and xanthan gum. Mix well. Mixture will be quite crumbly. Add cream and beat until no lumps remain. Add cheese and mix well. Dough will be almomst uniform n color.
Pat or raoll out dough on unfloured surface to 1/4-inch thickness. The dough should not be sticky at this point. If it is sticky, refrigerate it for a few minutes. Cut stricks approximately 1/3 inch wide. and up to 5 inches long. Place on greased baking sheet.
Bake approximately 12 minutes.
Maeks approximately 24 5-in long cheese sticks. Serves 6.
