With the summer festivities starting for me this week is the big kickoff for a hectic with Independence day (that is the holiday name not the 4th of July) then the next day starts a weekend music festival and then about every 2 weeks another festival until the end of summer. I have never restricted myself during these events but this year will be different. I will limit my alcohol consumption and eat mostly a planned menu, and not the vendors. Which should save some cash and allow me to keep my caloric limit going.
I have a few ideas for easy camp food but if you have anymore please chime in maybe we can help each other out.
Kabobs - Cheap lean meat and plenty of vegetables and fruits for desert.
Foil dinners - Chicken or shrimp with plenty of vegetables
Sausage with peppers and onions replace the roll with a low carb tortilla chop the sausage in small pieces and use 1/2 the amount of a normal serving
Baked potatoes in foil placed in the coals
Sweet corn in the husks soak them in water then grill over fire water in the husks helps steam the corn
Watermelon - lots of h2o and low in sugar
Popcorn - low calorie especially when compared to smores and lots of fiber
Grilled chicken - Use a marinade (partial to Chiavetta's myself) instead of sugar laden B-B-Q sauce
What do you got????
