Food Prep Help?

This week I'm going to be spending my day off cooking and freezing a month's worth of dinners and breakfasts for my boyfriend and I. I think it'll make it much easier and less time consuming to stick to a healthy diet if I have everything frozen in individual servings and ready to take out the night before I want it.

I only have one problem. I don't like the idea of eating big meals for lunch since I have to bring it to work and I've never prepped food in advance so I have no idea how long things last in a container in the fridge. I'm assuming sliced fruit and vegetables won't last more than a couple of days (that's what I usually eat) and I'd like to do my lunches 1 or 2 weeks in advance. Can anyone suggest what I could store in containers for my lunches that will actually last a while? I work Monday - Saturday so I need something that will last 7 days. Is there a way to make fruits and vegetables last longer? Thanks!

    Freeze them! I keep frozen fresh vegies to steam in the microwave in the freezer at work, and I keep egg whites this way too. Boiled eggs and hard cheese, apples and almonds make great lunch and they all last for a week. Also I buy chopped salads at the grocery store and keep in the fridge at work and they keep for a week. Grilled chicken is great in these salads, and keeps for a week.

    I eat a lot of fruit and raw vegetables. Cut carrots, beets, cauliflower, rutabaga, melons and pineapple stay fresh for at least six days in the fridge in an airtight container. Everything else is best just after "opening". You could eat the whole of smaller fruits?
