Tips on substituting whey for flour

I'm currently on a protein powder baking kick but I'm having a really hard time figuring out how to make good:
1) protein pancakes - made these with 1 scoop of Canadian maple whey, Greek yogurt, 1 egg white, cinnamon and blueberries and they were heeeellllllaaaaa dry. I'm scared to use cottage cheese in my pancake recipes because I hate cheese. I know you can't taste it but even the mental issue of me knowing there's cottage cheese in it is too much for me to handle. I'm sorry for being a baby about this.
2) oatmeal chocolate chip cookies with protein powder substituted for some of the flour. I'm trying to use this recipe for the cookies:http://www.chelseasmessyapron.com/the-best-healthy-oatmeal-chocolate-chip-cookies/
I'm going to sub maple syrup or honey for brown sugar. Can anyone help or give me some kick *kitten* amazing recipes using protein powder? Right now I have maple and vanilla :)

    Just google 'protein pancakes' or 'protein cookies'.

    Personally I haven't had any success without any flour.

    I did find the recipes on google but they didn't turn out which is why I turned to the MFP community :)
