    I read that garlic powder doesn't contain much, if any, allicin (the magical compound that is produced after crushing a clove). Is this true?

    Yes, it's true. Allicin has a very short active life before it decomposes

    We eat it everyday, I grow enough to last through the winter. I joke that garlic is a vegetable, not an herb, in our house.

    I'm so accustomed to tons of fresh garlic in most of the savory dishes I make, that when I eat "garlic bread" from a restaurant, that dehydrated garlic they must use on the bread (?) doesn't even register as garlic to me, I just taste butter.

    I always finely mince a clove and put it in my tossed salads. Delicious!
