healthier potato soup?

Any ideas on how to cut calories and make potato soup a little more healthy?

    Reducing salt, reducing fat, and adding fiber come to mind.

    Reducing salt; try puree'd onions, garlic, parsnip, and white pepper with half the salt you would usually add. Add salt at the end of cooking.

    Reducing fat; use milk instead of cream. Cut any butter called for.

    Adding fiber; the aforementioned onions and parsnip will help. You could try replacing half the potatoes with cauliflower. Or use a sweet thin skinned potato like red potatoes, and don't peel them. Let the soup be full of little red bits.

    Potato soup is pretty good all by itself though. Roasting the garlic could add fresh zest.

    My family also likes her Broccoli Cheese and Potato soup (as well as just about everything on her site).

    I can vouch for the skinny taste soups. Her stuff is good
