Repetitive diet

My diet tends to be pretty similar from one day to the next. I don't eat breakfast as I am never hungry in the mornings, get lunch on campus which is a sandwich or wrap, then dinner is a veggie burger (without the bun) and a salad.
Problem is, repetition is boring!! I'm on 1200 calories per day and simply cannot afford to buy meat and I don't like fish, with the exceptions of tuna and shellfish though this tends to be pricey.
Do any of you lovelies have suggestions that would fit my calories and measly budget that are also reasonably easy?

Peanut butter would be a great protein and is fairly reasonable, as are eggs, avocados are a healthy fat, watch for sales in meat, chicken is affordable usually, specially if you get a whole one and either roast it or cut it up. I do protein shakes for breakfast, but eggs or oatmeal are also good go to's. Then I would suggest lots of chicken, tuna etc for supper. There all tons of recipes on MFP, as well as Internet for ideas, if you can't afford all the ingredients, get what you can and go from there. We'll have breakfast for supper a lot, usually sausage/cheese omelet a, protein pancakes with sausage,sometimes (rarely) I'll make French toast and sausage. Good luck!! I also like to get veggies like cabbage, yellow squash and zucchini, onions, etc and make a sauté of them to go with a protein, but you could easily throw some chicken chunks in and have a complete meal.0

Dried beans and legumes are a great low cost protein source, there they're also adaptable to many cuisines with a slight change in spicing (from italian to middle eastern to Indian to Mexican. . .)0

Instead of a salad and veggie burger, make an omelet with veggies.
Beans and rice.
Sweet potatoes.
Ramen noodles (with only half the packet).0 -
Veggies make a diet infinitely interesting. Soooo many ways to prepare, and with the right fats, they are delicious. Stir fry, soup, salad, and any variation of that. Okra is a more recent fav. Buy if fresh or frozen slices, stir-fry in pan with sunflower oil or ghee, chili powder and garlic powder, salt, then add fresh lime.0

Potato soup
Oatmeal

i eat the same thing every day and don't worry about being boring. its just fuel for my day. i go look for excitement in other things i'm doing during the day besides eating.0
