Favorite 'Diet' Foods?
So I cook about 95% of our meals, always have, so cutting out fast food and eating out isn't a hardship at all (in fact I don't know that we'd even miss it). But what I really want are ways to make our meals healthier then they already are. I rarely fry anything except for my homemade chips, but we do like our dairy products. Luckily, we're not well off enough to have any snacks or desserts in the house, but that puts more pressure on me to make healthy, filling meals. So I wanted to know what everyone's favorite go to healthy meals are, and get some ideas! The hardest part has been incorporating vegetables, because one member of my family (NOT a child) refuses to eat 90% of all vegetables, and even spent ten minutes picking out every spinach leaf from her pasta one night!

Right now, cauliflower rice. I had a big bowl of it with some chili on top for dinner tonight (and have four extra portions lined up for leftovers for the next week). Yum, especially when it cut my required insulin dose in half (about 90g vs 45g net) compared to regular rice (though I'm sure it could be mixed pretty well with rice for that same starchy-feel with fewer calories).0

We eat a ton of vegetables and thankfully everyone likes them. However, you can sneak them into things like soup and pasta sauce by cooking them and then blending in the blender or food processor along with tomato sauce for pasta or broth for soup.
I also make a healthy version of individual pizzas using corn tortillas, add toppings and a little bit of cheese, then bake. Much lower calories than a regular pizza.
For desserts - you can freeze mashed bananas mixed with PB2 (I like the chocolate) and make popsicles. Also, just blend or mash fruits like strawberries or mangos and freeze like a popsicle. I also love baked apples with a little cinnamon.
I make a apple/pear fruit crisp with just an oatmeal topping. Mix oatmeal, a little coconut oil (or butter) and a little bit of sugar or honey. Sprinkle on top of sliced apples or pears or whatever, then bake. My hubby loves this and it is a pretty healthy dessert without a ton of junk in it. If I have the calories to spare I will add some half & half.0
