Just yesterday I discovered a new snack. Cucumbers with chipotle sauce and nutritional yeast. They are crunchy and spicy and cheesy...and if you use a whole serving of the nutritional yeast you can get 8g of protein as well.0

Next best thing ever: Raita. Cucumber, yoghurt, cumin. Love that ... ;-) google the recipes and select one that appeal to your palet. ;-)

Cucumber Dill Yogurt Salad is one of hubby's foods:

4 medium-small cucumbers (4 cups chopped)
1 cup whole milk yoghurt (preferably Greek or a rich creamy yogurt)
1 small bunch of fresh dill (about 1/4 cup chopped)
1 medium garlic clove, crushed or minced (optional)
1/2 tsp sea salt. A dash of black pepper

- Dice cucumber, grape tomatoes, black beans, and avocado. Spritz on lemon, salt, pepper, and drizzle with balsamic vinegrette and chill in the fridge. Eat on its own or add quinoa to it for more protein. Yum!
- Slice cucumber length wise thinly. Add on hummus, tomatoes, avocado. Spritz with lemon, balsamic vinegrette, or any other yummy dressing!0 -
Cucumber Pineapple Salad: 1 cup diced pineapple; 1 cup diced cucumber; 1 shallot; 1/2 jalapeno; 1 TBSP maple syrup; 2 TBSP shredded mint leaf; zest and juice from 1 or 2 limes. This is best after sitting for an hour or two.0

I like it sliced and used in sandwiches, great with hummus. I like it in tabouli salad or tahini salad. Great in wraps, summer rolls and sushi. It is awesome in fruit salad too. Try is with strawberries and orange. Here are some recipe I have made.

Tzaziki is tasty. In Bulgaria we eat something similar that's weird to foreigners - the same ingredients (cucumber, yoghurt, garlic, salt and dill) plus some water so that it looks like a soup. Some people also add crushed walnuts and oil. This soup is called tarator, you can eat it with some toasted bread or crackers.0 -
Spiralize or shred cucumber over a serving platter.
Smoked salmon sporadically thrown over the cucumber.
Creme fraiche / Greek yoghurt mixed with lemon juice - liberally dotted over the cucumber and salmon.

I love cucumber salad with shrimp. Basically I chop up the cucumber and dress it with ginger vinegar and a few drops of sesame oil and sesame seeds. If I've got any, I put scallions in as well. And then I scatter shrimp all over it. Best lunch ever.0

You'll need cucumbers, cherry tomatoes, and mozzarella cheese. Prepare your bake pan with a light coat vegetable spray. Slice your cucumbers and lay them on the pan. Sprinkle a few bits of cheese on each cucumber. Place half a cherry tomato on top of each cucumber. Bake 350 degrees 20 minutes. Serve.0

Here's my favorite cucumber recipe:
I combine sliced cucumbers with grilled tofu and a small sprinkling of chopped peanuts. Over that, I put a dressing made from equal parts Tamari and fresh lime juice. You could add chopped jalapenos to the dressing for a kick if you like. I just love the flavor of this dish!
Of course, you don't need the tofu and peanuts. You could just have the cucumbers with the dressing and it'd still be amazing.0 -

1- Peel cucumber, slice thin, vinegar, salt, pepper, green onion, and roasted/ salted sunflower seeds.
2- Peel cucumber and eat with fresh lemon and salt.

1. Cucumber, frozen pineapple chunks and mint blended into smoothies. A slosh of gin in there is extra yum.
2. Cucumber soup- sauté onion & garlic & cukes then simmer in light coconut milk. Purée.
3. Julienne cucumber sautéed with thin strips of fresh jalapeños and scrambled eggs or tofu/nutritional yeast. Roll up in tortilla.
4. Farro, diced cucumber & tomato salad with balsamic vinaigrette.
5. Cuke slices, lime, ground peanut or peanut powder, red pepper flakes, green onion, cilantro with rice noodles.
6. Mandolin cuke strips tossed with your favorite slaw dressing instead of cabbage.

Shred a peeled cucumber
Add it to a bowl of whipped Yougurt
Add half a teaspoon of salt , garlic powder and cumin powder
Mix and enjoy as a side or as a snack

2 large cucumbers, peeled
1/3 cup rice vinegar
4 teaspoons white sugar
1 teaspoon salt
1 1/2 teaspoons minced fresh ginger root
Add all ingredients to list
Cut cucumbers in half lengthwise and scoop out any large seeds. Slice crosswise into very thin slices.
In a small bowl combine vinegar, sugar, salt and ginger. Mix well. Place cucumbers inside of the bowl, stir so that cucumbers are coated with the mixture. Refrigerate the bowl of cucumbers for at least 1 hour before serving.
Very refreshing on a hot day
