Looking for some easy dinner ideas that are enjoyable for even my one year old to eat. He isn't picky or anything like that. I am looking more for something that is fast, easy, healthy, and simple enough for a 1 year old. (Im not needy or anything) :) Any suggestions?

My daughter is 1 year and 3 months old. Sometimes I cook things that we can share. Can't remember everything but she loves most of it.
Examples: red quinoa and green vegetables soup. I put everything in boiling water (usually I use a frozen veggie mix- peas, onion, celery, carrot, brussel sprouts). Some olive oil and green spices. When it's ready, I add some yoghurt or cottage cheese. Idk how this sound to you. Sometimes I put small pieces of chicken meat, too
My daughter also loves green beans and potatoes (boiled) with some yoghurt.
Bulgarian moussaka is something everyone in the family would eat in a blink, I can give you the recipe if you are interested.
Zucchini baked or boiled with cheese. Spinach cooked with some milk and eggs. Broccoli and cauliflower are perfect for a 1 yo.
Do you have any other ideas?

At that age? Some protein, veggies, some potato/pasta/rice. Bam done.

That's still our dinner most of the time, frankly.

Unless your child has still issues with chewing, anything. And even if chewing is still a problem, go for super small bites and softer textures, by e.g. choosing more tender meat cuts, boiling or steaming for longer vegetables etc. Unless there are allergies or other special dietary restrictions, there is absolutely no reason for special meals at this age. Do not simplify meals for him, unless the plan is to make him picky ;)

To be honest we just had our kids eat what we were eating...and that is pretty much everything. Now, we always had a back up which was usually some tofu or plain pasta or rice in the fridge that we could just quickly add...

At restaurants it was the same. If we were at Sushi, then we would pull apart a California roll or get him a avocado roll and some tomago. At dim sum he would get a har gow pulled apart, some rice noodle rolls. At Thai, he would just get some pad si ew...

Of course, we are lucky that they were willing to try pretty much everything. Made travelling very easy.

My son is now 2, but when he was that age, I would have him eat whatever we were eating, but would put it in a food chopper first. If it was too chunky still, I would add a liquid of some sort to it and puree it.

When my dd was small I had a book called Good Food for Kids by Penny Stanway. It had good simple recipes. http://www.amazon.com/gp/product/0865731527?tag=openlibr-20
You could check your library to see if they have it.

Same as adult food. Just make sure the food doesn't touch each other on the plate. Also keep things as simple as possible - for example, kids prefer plain avocado over guacamole

I started my son with brown bread, wholewheat pasta etc. from when he started eating proper food. Now he will pick the healthier choice everytime :)

No reason why food shouldn't touch...most kids are already familiar with mixtures as they were introduced to solid food.

Also no reason to keep food simple from a flavour point...

My kid is super picky and has lots of issues, but stir fry noodles +veggies + a scrambled egg in it is the go to for dinner right now. :)
