Too few calories/protein, but too much fat and sugar??!

I've been logging my food for just over a week now, and the results have been very surprising:

a) On most days, I eat too few calories. On a couple of days I reached 1400 - 1600, but the every other day I come in just under 1000 calories. I think I should be getting about 1200.

b) I'm often over the fat limit

c) I'm always way over the sugar limit. Like 3 times over.

d) I'm usually nearly vegan, and although I've been trying to get canned tuna and yogurt in my diet, along with protein shakes 1 - 2 times per day, I'm still not meeting my protein goal (though I am close)

So I have a few questions: Is it really bad that I don't consistently get over 1000 calories? Is it ok to "zig zag", one day of 1600 and a few days of 1000? What sort of foods will help me get more calories and protein without increasing my fat and (especially) sugar intake?

**I'm talking only about calories that I eat, I'm not subtracting calories from physical activity.
