How many calories should I add for frying?

Hello,

I made a a ground turkey version of beef wontons that my mom used to make. I want to enter my own recipe but I don't know how many extra calories to add after frying them.
What is a good technique for accounting for the oil that was used for frying?
Another question:
What is the calorie difference between ground beef versus ground turkey?

    Not sure what to tell you as far as calories added for frying.

    I used to estimate the amount of oil I used but it recently occurred to me that if I weighed the bottle of oil prior to pouring some in my frying pan and then reweighing afterward, it would give me the number of grams of oil that had been used.

    This is what I do when I fry in my deep fryer. If I fry in a pan/pot than I measure the oil going in and than measure the oil left.
