Ingredients:
- Sole Fillets (2)
- Asparagus (2 cups, chopped)
- Potatoe (1 cup, chopped)
- Olive Oil (3 tsp) (Optional*)
- Salt & Pepper (To Taste)
- Lemon juice (Optional*)
Preperation:
- Put asparagus & potatoes into a frying pan on medium heat, drizzle 2 tsp of olive oil and mix. Cook until fork can easily spear both vegetables with regular stirring. Add pepper to taste. Put aside.
- Use left over olive oil mixed with salt & pepper to fill the bottom of the frying pan. Add lemon juice (approx. 1 tbsp) if you wish. Bring to a sizzle.
- Sprinkle pepper over the tops of both sole fillets and fry in olive oil for 2 minutes on both sides.

278 Cals is an appetizer.
And that also sounds like more than 278 Calories. 3 tbsp of olive oil is typically over 300. 1 cup of chopped potato is likely about 170 Cals or so. 2 sole filets? Those are gonna be small filets. Add about 40 Calories for the asparagus.0 -

What's 'one cup of potatoes' anyway?
It does look tasty though, I just don't think your calorie count is accurate if you're not weighing your potato (I'd guess it could be anywhere from 110 to 200 calories of potato right there).0 -
The calories sound a bit shy... I'm guestimating a bit here:
100 calories per small fillet (around 140 gram).
A minimum of 120ish for a cup of potato already puts you at 320 calories.
Aparagus maybe 30 cals (350)
Lemon juice 5-15 cals (365)
oil - 120 cals per Tablespoon (80 cal for 2 tsp so 445ish?)
It does sound so good
If you feel up for it, flour your fish before you fry it. It gets a lovely crust on it that makes it seem so pro!0
