Baked Chicken Tip

Before my open heart surgery we would bake chicken legs with seasoning salt in a casserole dish at 350° for 75 minutes. I've made it healthier by removing the skin using a salt free seasoning and rather than cooking it in a casserole dish I used a cookie sheet and placed a metal cooling in it. I sprayed the cooling rack with cooking spray and placed the legs on the rack. Added water to the cookie sheet to keep things moist and baked it in the same way I used to.
It's amazing to see how much fat ends up in the water below. This works with other cuts of chicken but BE CAREFUL taking it out of the oven the water from the cookie sheet can burn you if you don't keep it level and take it slow. Try using smoked paprika as a seasoning or a small amount of Riley's salt free all purpose seasoning (use more if you like a lot of pepper).
