Pi day recipes that don't have too many calories?

Good morning.

I am looking for ideas to celebrate Pi day that are still diet-friendly. My husband is a math teacher, so it is a big day for our family.

Previous years, I would make homemade pizza "pie" and a fruit pie for dessert. That is not going to work today. I could make them for my family and eat something different, but that is no fun!

I was thinking maybe some kind of low-calorie pie crust with just fruit layered on it?

Needs to also be:

1. dairy-free (or substitute dairy product like almond milk cheese),
2.vegetarian,
3. no-tomato (or adaptable. I make pizza and make a smaller one with carrot "no-mato" sauce for my daughter with that allergy).

(As you can see, cooking is not easy for my family. Makes dieting harder when I have to spend so much time planning meals!)

    This might work with a cheese substitution? You could add a nice salad.

    Tortilla Pie
    Servings: 4

    12 oz drained canned red kidney beans
    1/4 cup [4 oz can] drained diced green chili peppers
    1/4 cup minced onion
    1 Tbsp chili powder
    1/2 tsp oregano leaves
    1/4 tsp salt
    1/8 tsp hot sauce
    Dash ground cumin
    4 corn tortillas [6 inch diameter each]
    4 oz sharp Cheddar cheese, shredded

    Preheat oven to 400° F. In medium bowl, using the back of a fork, mash kidney beans to a paste; add chili peppers, onion, and seasonings and mix well. Set aside.

    Break each tortilla in half; on baking sheet of sheet of foil bake tortilla halves until crisp, about 2 minutes. Remove from oven but do not turn oven off.

    Arrange baked halves, curved side out and overlapping, around edge of 8 inch pie plate; spread kidney bean mixture evenly over tortillas, leaving a tortilla border all the way around. Sprinkle mixture with cheese and bake until cheese is melted and pie is hot, about 15 minutes.

    Each serving is equivalent to: 2-1/2 Protein Exchanges; 1 serving Bread Exchange; 1/4 Vegetable Exchange

    Per serving: 266 calories, 15 g protein, 11 g fat, 30 g carbohydrate, 620 mg sodium. 30 mg cholesterol.

    I was just trying to figure out a way to make something lower calorie. We are math nerds here so we always have pie.

    Any regular crust is so loaded with butter so calories galore.... I was thinking maybe like an apple crisp or crumble. I might try some egg whites mixed with some oats to make a "crust" then load already cooked fruit on top.

    I found a no bake key lime pie recipe and changed it to lemon. Everyday diabetic recipes Mr food test kitchens.

    I tasted a bit that was on the spatula when I finished making it and it's delicious. It was very fast and easy to make and a serving comes to 126 calories for my ingredients.

    Lots of low calorie options for different flavors came up on search.

    *the one I made has cream cheese but there were other options on search with no dairy.

    I'm making little mini open-top pies in muffin tins this year, more like little fruit tarts. I can make just a few and then we can each have a couple and not have a whole giant pie to pig out on.
    For dinner, maybe go ahead and make pizza, but with cauliflower crust with garlic & olive oil instead of sauce, topped with mushrooms, spinach, onions, whatever else strikes your fancy?

    I make a quiche with bread as a crust. You just need to cut the bread into pieces to fit the pan like a pie crust. It doesn't need to be perfect, especially at the bottom, if you can get a nice side edge, then you're doing well. Usually 5-6 slices of bread will do it. I also use a thin bread which is only 55cals per slice. Bread will cut out a lot of the calories in a typical pie crust made from butter and flour.

    If you can do eggs, then I usually use about 6-8 eggs with about a cup of almond milk. Salt and pepper and any other herbs to your liking. I usually add a bit of cheese, but that could be omitted. Then veggies to your liking.
    - Carmelized onions is a fave
    - Carmelized onions and broccoli (ok... basically carmelized onions and anything goes pretty well)
    - Feta and red peppers
    - Spinach
    - Leeks and mushrooms
    Pre-cook the veggies (saute them) so there is next to no liquid left - they don't have to be dried out, just not emitting any more liquid and very little liquid in the pan.

    Beat up the eggs, mix in the almond milk, season, mix in the veggie mix. Pour it all into your PI pan. Bake 40 minutes at about 375, until a toothpick comes out clean.

    The one I did yesterday is 312 calories for 1/4 of the pie. That's a lot of quiche.

    If you cannot do eggs, I think there are some good recipes using tofu instead.

    I made a two serving key lime pie for my husband and me. 250 calories a slice. I did not scale down the ingredients but made three 2 serving pies. Froze the other two without baking them.

    You could do a crustless quiche. Lots of recipes online.
