Looking for advice on raw lean bottom round. I'm not new to this (3 years) but this one has be a bit baffled.
I am making my own beef jerky and and using bottom round as lean as I can find and then trimmed as close to zero as I can get. Taking the total raw calories and dividing it by my dry weight.
I'm finding anything from 35 to 60 calories per ounce. Not a huge margin but I am making pounds at a time so it adds up quickly.
Any ideas?

Did you try the usda site?0

Yes. 37 calories per ounce. Much lower than everywhere else I look. To trust?0

I would but they are estimates. How do you know the exact fat content? You could go with the higher number and be safe. I would rather over estimate than under.0
