Vegan/vegetarian meal plan in college

Hey!

I'm vegan/vegetarian and I'm wanting to lose weight and lean out again. At my lowest last May, I was 145 and super lean but since then I've gotten bulkier and gained weight (161 lbs now). I'm back in college now working on my second degree and I'm trying to figure out a good meal plan when I'm at school all day that doesn't require me to buy food from the food court. I have no access to a fridge or microwave while at school, so I'll need foods that can be at room temperature all day.

My daily calorie intake according to MFP should be 1290 and I'm working out using Jillian Michaels 30 Day Shred and the C25K program again. Again, I'm not a stranger to MFP or losing weight, but now that I'm in school again, I just want tips on what recipes to bring with me because I want to eat six meals a day.

    I would get a lunchbox that has an ice pack in it to keep foods cool. That will greatly increase your options. Here's the one I have - http://www.planetbox.com

    Can you use a crock pot?
    You can cook dry beans on low over night...

    I think a lunch bag with ice packs is a great idea.

    -Nuts, pnut butter and bread.
    -Apples, bananas and oranges.

    Without a fridge though, how will you eat vegetables? I think veggies are super important to eat everyday...

    -whole carrots...

    Is there a regular dining hall? (Not a fast food type place?). If so check it out and maybe get a meal plan. My dhall in college had an awesome salad bar and plenty of healthy choices.

    Celery, carrots, capsicum/peppers, cucumber etc with hummus is my fave on the go. I find it filling plus fiber!

    Protein balls (checkout Deliciously Ella or The Minimalist Baker for recipes)
