I am currently taking Phentermine, as prescribed by my doctor. It's supposed to help boost your metabolism and help you not feel so hungry. I don't feel hungry nearly as often and I don't feel the constant need/want to eat. However, that sometimes makes my daily calorie intake near or under 1,000. Am I supposed to eat until my calorie goal is met even though I'm not hungry?

You need to make your self eat every couple of hours...at least a protein shake it you can't eat. If I don't eat I feel dizzy or start to feel sick. Same with water...all day!0

I suggest another route: plan one high calorie food into each day. Eat half an avacado on toast, eat some nuts, something. Certainly better than going onto a VLC diet and suffering nutritionally. You don't have to stuff yourself but your body does need more than 1000 calories even if you're not especially hungry. Minimum for women is 1200, so really you only need to eat another 200 Cals to help prevent deficiencies.0
