My lunch I just had consisted of homemade cheese biscuits, broccoli, and peanuts
Calorie and macro count is tricky due to the biscuits, but from my estimates the total was around ~650 calories, 61g carbs, 22g protein, 32g fat

I repeated last night's dinner - sauteed shaved Brussel sprouts in olive oil with garlic and sun dried tomatoes. Seasoned with salt, pepper and red pepper flakes. Then I added a lot of shrimp and 2 servings (64g) of bottled general tso sauce. It's so freaking good lol. I would do rice also if I wanted more calories in the meal. It tastes just as good as going out for Chinese.

331 calories. 33g protein 9g fat and I didn't pay attention to the other macros. I mostly worry about protein and everything else fills in nicely. It's probably low-ish carb since I didn't do rice.
