Flaxseed Pancakes

Hey everyone!
Just thought I'd share this recipe for flaxseed pancakes. It's actually the perfect tri-blend of micronutrients (fat-protein-carb). It's low carb, packed full of good stuff, and super easy to whip up. Good for breakfast or a snack!
2 eggs, whisked with fork until totally combined
2 Tbsp milk (or a splash), whisked into eggs
2 Tbsp ground flaxseed meal, whisked into wets
Get a biiiigggg nonstick frying pan (bigger the better for crepe-like cakes, or if you like yours thicker/mealier use a smaller one).
Heat up butter or bacon grease or oil of your choice.
Whisk the mixture as you pour into the pan so that the flaxseed meal does not settle in one spot. It should sizzle when it hits the pan. Gently slosh it around the pan so that it covers the entire bottom.
Let the pancake get a very nice crispy brown on the bottom before trying to flip. A big spatula is the best! It may take practice to flip it without it splitting.
Let it cook on the other side til brown.
I love having mine with yogurt and fruit. Applesauce also is good. Or a drizzle of honey.
