Looking for vegan meal prep and snack ideas

Aside from the general - beans/legumes/tofu/veggies I am looking for meal prep ideas. I like to prep on the weekend for easy heat up and/or grab and go during the week. I am also looking for snack ideas. Thanks so much!

    Forks over knives app! Its all vegan! Snacks, dinner, lunch, breakfast and desserts.

    I like to make up some tofu strips (cooked in a pan on high heat with a little oil until crispy) and leave them in the fridge for easy access. I'll also cook a big pot of beans to leave in the fridge. This makes meal prep sooo easy. I'll throw that stuff on lettuce with some chopped up veggies and have it for lunch.

    Last Sunday when I prepped I cut up a bunch of veggies and bagged them for easy pickin's. I had hummus, salsa and avocado on hand. Tofu, tempeh and some veggie protein crumbles as well as nutritional yeast. I had some berries, nuts and seeds ready to go. I also steamed a few veggies (brussel sprouts, leek and rainbow chard). I made a batch of brown rice, a batch of lentils and a batch of sweet potatoes. So I've been doing really good all week. My plan for this weekend is to do the same thing only come up with a few new dishes for the week :smile:

    Check out Lindsay Nixon with Happy Herbivore. She sells a Meal Mentor plan that is actually really reasonable that outlines a weeks worth of meals, recipes and shopping list adaptable to an individual or family.

    Pinterest has a ton of vegan recipes. I have had great luck with just typing in "vegan" and "[ingredient]."

    There is a book called 366 ways to cook rice, beans and grains. It does not advertise as a vegan book, but most of the recipes are vegan. The recipes make large quantities. Soups and salads that can be made ahead.

    It is a mail order service which sends convenient and healthy snakes to your door. I sound like a commercial, I know but it works for me. I've never been unhappy with what they send, it's all creative and delicious and because they are in small portions I don't overeat either.
