Healthy St. Patty's Day meals/treats

I love cooking and baking and usually make a meal fitting for every holiday.

Any ideas for a healthy St. Patty's themed entrée or treat?

    Corned beef with cabbage, potatoes, and carrots. And Irish soda bread.

    It's pretty much what I've been eating for 2 days... filling and delicious (ok the bread didn't last more than 20 hours).

    Although it might be too late by now to get some corned beef cooking if you plan to have some for dinner... But I guess you could make some shepherd's pie?

    I made homemade corned beef and cabbage and a Katz's smoked pastrami over the weekend and not one drop survived our houseguests...the pastrami was amazing and only 40 calories an oz, so 160 cals for a quarter pound serving. This weekend all the corned beef that didn't sell for St Paddy's Day will be on sale, I foresee a delicious pastrami or two in the near future!

    Corned beef, while tasty, is actually not really a traditional Irish dish Is Corned Beef Really Irish?. I used to have corned beef, cabbage (potatoes and carrots too) for my birthday though!
    Colcannon is a dish I can get behind - basically potatoes with some sort of greenage like kale, leeks, etc. Alton Brown does a version with whiskey :lol:
    Irish brown bread - no rising time involved
    Pretty much potatoes, leeks, bacon and lamb! Mmm bacon.

    Shepherds pie is English, not Irish. And it's made with lamb (hence the name).

    Brotchan Roy. It is soup thickened with steel cut oats and it is delicious. I realize this is too late for St. Paddy's day, but the soup is still great.
