Then I'd just stalk sales and stock up on that stuff when it's on sale (and frozen veggies!).
Did you see my post in recipes about perfect brown rice? Apply the same technique to white rice but for less time..
Try this, it's the best way to cook rice. Always perfect, takes the guesswork out of it.

Oh thanks. Unfortunately I don't have any pot with lid that goes in the oven (or any dish that I can cover tightly with aluminum foil either)0 -

Oooh girl, I've been there! College taught me how to be resourceful though... ever open a wine bottle with a metal hanger?! Hehe. If you havevsn earthenware, glass, or metal bowl, skillet, or pan, you can put a plate on top instead of a lid. Just experiment with the sizes to get a good fit. Try to use a plate with a lip at the bottom if you can.0 -
You are doing good on so many levels. You could ease in to this diet changeover, picking up on sales where you see them. I also vote for beans and lentils for fiber. They are cheaper than meat, too. You could make a spicy black bean chili for instance, very hearty and filling.
It would pay to learn a few recipes, like brownies and pancakes. Here's a couple to try:

I suggest replacing half the oat flour with regular flour for a newbie baker (It will be easier to flip). You can make your own oat flour by running oat flakes through your blender.
For an inexpensive and hearty breakfast I always depend on my oatmeal. Steel cut oatmeal can be prepared the night before, 1 cup oatmeal to two cups water, bring to a boil and turn the heat off. Cover and let it absorb overnight. I then pour the leftovers in to mason jars to heat up through the week. Easy peasy for the busy working cook.
Hey!!! Thank you for your suggestions!! I picked up dry lentils and black beans yesterday! Apparently I have to cook them in two steps?! Who'd have thunk it? Lol
Also, I appreciate the baking recipes. Pumpkin spice pancakes sound awesome. Great tip about the oat flour!!!! What, are you some kind of wizard or something?! Sheesh! I've been living in the dark ages0
