Meat free ideas

I'm trying to eat meat free and curious what fellow non-meat eaters are having... Especially for lunch I find it hard to think of what to have that's quick easy and not tomatoes, cucumber or carrots

    Easy- leftovers from last night's plant based dinner. Make extra portions of dinner and you'll never have to eat out for lunch.

    There are plenty of foods that aren't meat and aren't salad veggies. All the other vegetables, all the fruits, all the dairy. Yogurt, nuts, nut butter (peanut butter, cashew butter...), cheese, sweet potatoes, beans and lentils, squash, tofu, avocado. Vegetable soup, chili, hummus, veggie burgers. Rice, potatoes, barley, oats, corn. Vegetable pho. <--- yummm! Eggs - hard boiled, poached, fried, omelettes, frittata. Pasta - veggie lasagna, cheese ravioli, pasta primavera, with alfredo sauce, with red sauce. Pizza. Okay, now I'm hungry!

    This stuff is seriously awesome! I had it a couple times this week, filling and still lost weight, no problem.

    I like to have a salad with a boiled egg.

    Beans and a tortilla or tofu and veggies.

    Soy "chik" parties are good.

    Peanut butter/honey/bananna sandwhich and a yogurt.

    Salads -
    Green Chickpea, Roast Beets, Feta with a little olive oil
    Arugula, pear, Asiago in a basalmic dressing
    Quinoa, Lentil, Articohoke hearts

    Curries -
    green or red curries with veggies and/or Tofu

    Soups - I make and eat throughout the week
    Borscht
    Thai sweet potato with coconut milk
    Z'herbes gumbo
    Hot and sour soup with tofu and egg
    Miso Soup with tofu and wakame
  • I love yogurt and granola for lunch, easy & good. Coconut milk yogurt if your dairy free like me. Or making meat free soup & reheating it if you have microwave access, there are some amazing vegan soup recipes out there. My favorite is split pea & my carnivorous husband even loves it & doesn't miss the ham : )
    Or make homemade burritos then freeze them and reheat, bean & cheese, bean & meat free crumbles/boca patty
  • Also a good easy lunch, tofu hot dog! & potatoe salad or coleslaw, baked beans, one of my favorite summer lunches!
    & this may sound weird but it's delicious, an avocado sandwich.
    Good fresh sourdough bread
    Mayo (or veganise)
    Mustard
    Sprouts/lettuce
    And half and avocado sliced in place of meat sprinkled with salt and pepper

    Sandwich or wrap- peanut butter, cheese, beans, vegetables, grilled cheese, veggie burger, egg salad, bean burrito
    Pasta with marinara, with vegetables, with tofu, with cheese, with peanut sauce
    Soup- tomato, potato, minestrone, lentil soup, vegetable soup, vegetarian chili
    Salad with eggs, beans, potato, zucchini, spinach, broccoli, peppers, etc
    Cottage cheese
    Yogurt
    Oatmeal
    Egg- hard boiled, deviled
    Baked potato- white or sweet potato
    Cheese pizza
    Beans and rice
    Dinner leftovers are great for lunch.
